Disclaimer: this is not your typical recipe post! #Goodeats is the only part of the blog that isn’t in an audio format.

I love to cook as much as I love fashion, so it was only right to include a recipe post. Because I love my weekends and chose to hang around with no real agenda, I don’t want to spend my Saturday cooking meals over 30 minutes (including preparation). This Saturday was no different. I decided to do a remix of the ramen noodles I used to choked down in college. This vegetarian dish is perfect for anyone who wants to whip up something quick and easy, then binge watch shows on Hulu.

Here’s how to make it (single serving):

  • 1 pack of ramen noodles (I chose shrimp, but you do you boo! Other options are beef and chicken)

  • Creole seasoning (Zatarain’s)

  • Dry Thyme

  • All Purpose Seasoning (optional) - I got this from our local farmer’s market, but it’s not necessary

  • 1 head of broccoli

  • Sweet onions

  • Mushrooms

  • Vegetable or olive oil

  1. Boil 2 cups of water and add ramen noodles. Add half the packaged seasoning that comes with the ramen. In my case, it was shrimp seasoning. Cook for 3-5 minutes.

  2. Sauté broccoli for 5-7 minutes. Chop and add as much mushrooms and onions as you like.

  3. Season vegetables with Creole, thyme, and all purpose seasonings to taste. Sauté for 5 additional minutes.

  4. Drain noodles and remove vegetables. Plate noodles and add vegetables.
